The secret of cooking catfish right is a hot pan! For this
reason, it is best to use salad oil, as butter or margarine
burns if it gets too hot.
Soak fish in milk for one hour before cooking. If you flour
your fish about 1/2 hour before you cook it, the coating will
stay on the fish better.
Towel dry fish. Shake in a paper bag into which you have put
Bisquick, salt and pepper. Let stand 1/2 hour.
In frying pan, pour enough oil to just cover the bottom of
the pan. Heat until it sizzles when you put a drop of water
in it.Fry fish on one side until brown and crisp. Turn, fry
other side the same way. Drain on paper towels, serve hot.
